What to Eat in Genova: A Honest Local Food Guide

Genova has a food culture so specific, so local, so completely its own, that even many Italians from other regions don't fully understand it. This is not a city of elaborate restaurant dining. It's a city of daily ritual food — eaten standing up, wrapped in paper, at a counter, without ceremony.

Focaccia: Not What You Think You Know

Genovese focaccia — focaccia genovese — is nothing like the thick, oily versions found elsewhere in Italy. It's thin, crisp at the edges, soft in the centre, olive-oil-rich but not heavy, and eaten at any hour of the day. Locals eat it for breakfast dipped in milky coffee. The best versions come from panifici that have been making it the same way for generations. Look for Antico Forno della Casana in the old town or any bakery along Via San Vincenzo.

Pesto Genovese: The Real Version

The pesto you've eaten elsewhere is an approximation. Real pesto genovese is made with Genovese basil — a specific variety grown in the hills around the city, smaller-leafed and more fragrant than any imported version — ground by hand or in a mortar with pine nuts, Parmesan, Pecorino, garlic, and Ligurian olive oil. Order trofie al pesto at Il Genovese on Via Galata. The difference is immediate and permanent.

Farinata: The Most Underrated Street Food in Italy

Farinata is a thin, golden pancake made from chickpea flour, water, olive oil, and salt, baked in a screaming-hot wood-fired oven in a large copper pan. You eat it immediately, still slightly liquid in the centre, standing at the counter, wrapped in paper. Friggitoria Carega near the port is the local favourite. Don't ask for a menu. Point at what's coming out of the oven.

Trattoria da Maria: The Most Important Table in Genova

Cash only. Communal tables. A chalkboard menu that changes daily. Three courses for almost nothing. Trattoria da Maria in the old town has been feeding Genova since 1945 and shows no sign of changing. Go for lunch. Arrive early or expect to wait.
